Mother’s Day Pancakes with Smoked Salmon & Smashed Avocado

This recipe is super easy and requires no cooking, but makes a delicious Mother’s Day breakfast to spoil Mum!

Ingredients

4 Shop Bought Buttermilk Pancakes
100g Staal Smoked Salmon slices (or trimmings)
1 ripe avocado
1 handful chives, finely chopped
Lemon juice for drizzling

Method

  1. Peel and de-stone the avocado (if you’re not sure how to do this, Tom Kerridge made a great video which makes it really easy! https://tomkerridge.com/videos/peel-and-de-stone-an-avocado/)
  2. Place the avocado in a bowl and mash with a fork.
  3. Take the buttermilk pancakes out the packet and place two on a plate, one on top of the other.
  4. Place a couple of large spoonfuls of the mashed avocado on top of the pancakes.
  5. Take the smoked salmon trimmings out of the packet and pile a handful on top of the mashed avocado.
  6. Using scissors, snip the chives into small pieces and sprinkle over the smoked salmon.
  7. Drizzle a small amount of lemon juice over the top.
  8. Serve to Mum!
