Ingredients
4 Shop Bought Buttermilk Pancakes
100g Staal Smoked Salmon slices (or trimmings)
1 ripe avocado
1 handful chives, finely chopped
Lemon juice for drizzling
Method
- Peel and de-stone the avocado (if you’re not sure how to do this, Tom Kerridge made a great video which makes it really easy! https://tomkerridge.com/videos/peel-and-de-stone-an-avocado/)
- Place the avocado in a bowl and mash with a fork.
- Take the buttermilk pancakes out the packet and place two on a plate, one on top of the other.
- Place a couple of large spoonfuls of the mashed avocado on top of the pancakes.
- Take the smoked salmon trimmings out of the packet and pile a handful on top of the mashed avocado.
- Using scissors, snip the chives into small pieces and sprinkle over the smoked salmon.
- Drizzle a small amount of lemon juice over the top.
- Serve to Mum!
