170g Staal Oak Roast Salmon portion, broken into large flakes
4 thick slices rustic wholemeal bread
1 ripe avocado, stoned and peeled
4 tsp Chilli Jam (we like The Chilli Jam Man)
3 tbsp natural yogurt
Squeeze of lemon juice
1. Prepare the avocado and mash the flesh in a bowl with a fork. Add the yogurt and lemon juice and stir, then season with salt. Toast the bread and spread the avocado mixture on top.
2. Scatter over the flaked salmon and salad onions, then top with the chilli jam, to serve.
