Our cold smoked trout is a wonderful alternative to the more traditional cold smoked salmon. The trout we use is responsibly sourced and farmed in Scottish sea lochs. On arrival at the smokehouse it is dry cured with sea salt and dark molasses sugar before being smoked over a blend of Oak and Applew
